Daily Candy Kids :: Mini Chicken Pot Pie
Monday, October 24, 2011 RecipesI made this really cute scrumptious meal for Daily Candy Kids, it was featured last week in the What’s For Dinner post. The traffic may have caused our site to slow down a bit (as a daily candy feature tends to do!) so sorry for that! Hopefully you have come back to visit this week.
These minis are so easy and delish. I added a few root veggies like parsnips and sweet potatoes, cremini mushrooms and white wine – making it a great (and nutritious) meal for both parents and kiddos. And with Sophia walking now, easy has definitely been on my mind!

This is a great idea…I’m always making my pot pies a rustic fashion with huge chunks of chicken and potatoes, etc. , so the idea of delicate individual portions would be lovely for a change.

Pot Pie is a favorite of mine, so warm and filling. Perfect for cool weather. We have a few more warm days in the Bay Area (though I just missed the the snow in DC) but I’ll be making it soon. Love the idea of these single portions and these bright ramekins!
Yum…I made a shrimp pot pie last Thanksgiving as an appetizer and it was a huge success!

Gorgeous pics and I love the ramekins! I couldn’t find any cups as beautiful and small as the ones here but I did fill six 6-oz custard-cup-type ramekins…and the pot pies were delicious! Thank you!
