The trick to a great sauce is in the quality of the tomatoes and we love The San Marzano tomatoes. They come from volcanic soil and have a natural sweet and smoky flavor that is wonderful with pizza sauce.
This is a great easy sauce to keep in your fridge as well – enjoy.

This is exactly how we make our pizza sauce…we also add a bit of sugar and chopped fresh basil. It’s the perfect quick sauce! (That shot of the pizza is making my mouth water!)
Never cook tomato sauce for pizza. No Italian would do this. It gets cooked on the pizza, no need to cook it twice, it diminishes the tomatoes fresh taste.
Hi Isa – one of the wonderful things about Pizza is that over the years many different styles of preparation have evolved. The coal or wood fired oven, traditional deck oven, brick lined gas oven, DOC Neapolitan style etc. You have Grandma style squares, Sicilian square, Chicago deep dish style, NY thin crust style, and the latest trend gourmet or artisan style. Grilling Pizza is a great way to achieve the coal and smokey based crust flavor at home if you don’t have a coal oven available. Based on how you ultimately plan to cook your pizza there are some variables that can change how you prepare the sauce.
While I do understand that everyone has their own opinions regarding techniques for sauces, in this particular case the sauce (and all other toppings) require cooking beforehand because obviously it will not cook on the grill. Unless you have an oven at home that can heat up to 900 degrees you should make sure to cook your sauce if you intend to grill your pizza. I’d love to taste your Pizza sometime.
