We thought we’d share this delicious + simple soup with you — light enough for the slow change in seasons (spring is literally around the corner!) These earthy shiitake’s are the stars here, and we love their richness with a crusty sourdough bread. It is so very simple to prepare and it was the perfect sunny March afternoon lunch for us. We think it will be for you too.

This sounds fab; but we don’t have boxes of organic chicken stock here in the UK, so could someone please let me know how many ounces, grams or cups of stock there are in a box of chicken stock.

Wonderful! It’s lovely to have soups with a nice clear broth for a bit of a change from the pureed kind. Never thought to use shiitake and white beans together! Yum. Would go wonderfully with some radish greens or watercress I reckon.

I threw in dried Chinese mushrooms (don’t know what they’re called) and just made a basic herb oil using whatever i had in the fridge which turned out to be Thai basil and parsley….tasted great.
